Frying Studies: A Tool to Compare Oils, Additives, and Filter Materials

Problem: Marketing people understand the value of support data generated by third parties. A major oil supplier has developed a new oil from a genetically modified source. They believe that this oil could be an excellent frying oil but have no supporting data. How can they gather such information?

Background:  Frying studies are a key component in the evaluation of any oil, oil additive (antioxidant, for example), or filter product, which has an application in deep-fat frying.  What many people fail to take into account in their studies is that frying is a long-term operation.  Competent industrial processors and restaurant operators use oil until it has reached a point where the quality of food is compromised.  It is then discarded. Therefore, any oil, additive, or filter material must show benefits over the life of the oil.  For example, an antioxidant may protect a frying oil during transport and storage, but once frying is initiated, that antioxidant may break down. Its breakdown products may compromise the life of the oil and even be toxic.  It is, therefore, essential that frying studies be conducted in a fashion that mirrors how the product will be used in the "real world".
